Brunch Time: Omelette Croissants

Þ   2 croissants
Þ   2 slices preferred cheese
Þ   3 large eggs
Þ   2 slices turkey ham
Þ   ¼ cup diced green bell pepper
Þ   ¼ cup diced red bell pepper
Þ   ¼ cup diced onion
Þ   A pinch of salt and black pepper
Þ   2 teaspoons oil or butter

Get Cooking

1.     Place a medium sized pan on the stove at medium heat, Add the oil or butter and let it heat up.
2.   In a bowl, crack two eggs and add the salt and pepper. Whisk rapidly with a fork until fully combined.
3.   Add the diced peppers, onion, and ham to the pan and let them roast a bit. Then, add the egg mixture.
4.   Ease the edges of the omelette with a spatula. When it's consistent enough, fold it in half. As it turns golden brown, flip the omelette. When both sides are golden brown, slide the omelette on to a plate.
5.  Cut each croissant in half and toast them as desired. Then, cut the omelette in two pieces and place each piece on top of the bottom half of each croissant along with a slice of cheese. If desired, you can add some mustard or another slice of ham.
